Four Pillar creates Croissant Gin with Lune

Four Pillars Gin and Lune Croissanterie have joined forces to produce a silky, buttery limited-edition Croissant Gin.

Launching on 19 February, the limited edition gin was created by distilling Lune’s caramel slice-smelling clarified butter along with almonds roasted in the Four Pillars distillery kitchen, wattle seed, nutmeg, juniper and a host of other botanicals.

The gin creats rich and textural G&Ts or works well in a brunch-inspired cocktail like an Espresso Gin-tini.

Four Pillars Head Distiller Sarah Prowse said: “Lune croissants are made with nearly double the butter of your average croissant, so we knew that butter had to be a key part of the gin.

“It turns out there is a knack to distilling butter but after a few trial distillations we found our sweet spot and we couldn’t be happier with the end result. The nuts and spices add a real depth to the gin, the vanilla bean brings a hint of sweetness, and then we’ve bought in our signature organic oranges to deliver lovely brightness and balance.”

The collaboration came about when. Lune and Four Pillars, which were born in in Melbourne and made in Australia, were lucky enough to cross paths and quickly to find a lot of common ground. Both are obsessed with flavour, love local ingredients and have a commitment to craft and quality.

Lune kitchen tours turned into Four Pillars distillery visits, that turned into hand-delivered butter and test distillations, and finally the star of the show: Croissant Gin.

Lune Founder Kate Reid said: “Infusing our Lune magic into my favourite gin was a dream come true. I can honestly say I’ve never been thirsty for a croissant before but once you taste this gin, you’ll understand what I mean.”

Croissant Gin is available to buy from the Four Pillars website, Four Pillars Distillery, Four Pillars Lab as well as select Dan Murphy’s & BWS stores for $80RPP.
