Sofitel Sydney debuts Lumière on Thirty Five

Sofitel Sydney illuminated the city’s skyline this week with the opening of a luxurious new bar called Lumière on Thirty Five.

Nestled on the top floor of the hotel, Lumière has a focus on artisanal cocktails and French-inspired desserts. It mixes breathtaking views with world-class mixologists and chefs, alongside live music on Friday and Saturday nights.

The cocktail menu ranges from the timeless charm of The Lighthouse, featuring Two Doctors Whiskey, Averna Amaro, Pedro Ximenez, whiskey bitters and chocolate Bitters to the avant-garde allure of ‘Copper Moon’ with Brix Spiced, Averna Amaro, Kahlúa, Brix Cane Spirit, St-Germain Elderflower, orange oleo and chocolate bitters.

Drinks Digest also enjoyed sipping the pretty Purple Rain, with Butterfly Pea Flower infused Grapefruitcello, Campari, Italicus, and Fever-Tree Elderflower Tonic Water.

Lumière’s menu is inspired by French sophistication and global flavours, ranging from the delicate intricacy of its Native Flowerpot dessert – a bouquet of edible flowers featuring flavours of strawberry gum, passionfruit, lemon myrtle, river mint and wattle seed – to the rich, nuanced layers of its Ulladulla Blue fin tuna with bonito emulsion, smoked tuna garum and Polanco Baerii caviar. For those who prefer vegetarian offerings there are beetroot tartlets with shallot jam and whipped plant-based feta.
