New cocktail menu unveiled at Sydney’s Arches on Market

Arches on Market has introduced a new cocktail menu that aims to put unexpected twists on classics.

The bar is a hidden gem in the heart of Sydney CBD. Found on level 8 of Swissôtel Sydney, its signature arches behind the bar give the space a vibe reminiscent of the grand palm court bars of yesteryear.

Swissôtel Sydney unveiled the grand lobby bar last year following a multi-million-dollar transformation. The venue is filled with old-world charm and a touch of 1930s grandeur. 

At the helm of Arches on Market is Jacob Wilde (above), who began his bartending journey in Birmingham, United Kingdom. Over the years, Wilde has honed his skills across the globe in venues including nightclubs, restaurants, cocktail bars and event spaces before settling in Sydney.

As Swisshotel notes: “In an industry ever saturated with mixologists and waistcoats, Jacob stands out by honouring the timeless art of bartending. He creates drinks that are not only approachable but also imbued with meaning, with each ingredient thoughtfully chosen to reflect a story, memory or purpose.”

Among the reimagined favourites on Wilde’s new spring menu are the Thai Oh Mai, an Asian twist on the tiki powerhouse, with tamarind, passionfruit, green tea, orgeat, Bumbu Rum and Grand Marnier.

He describes his Actress and Bishop cocktail as the “older sibling of the passionfruit and vanilla martini that dominates brunches all over the world”. It features Ilegal Joven Mezcal, Chartreuse, Aperol and bubbles.

As for the Short and Dirty, he says “What if a Dirty Ester Gin martini jumped out of its glass and knocked over a bottle of bubbles on its way? The result would be the Short and Dirty with Ester Strong Gin, Noilly Pratt, Olive Brine and Chandon.”

And for those who prefer their chocolate bars in a glass, the Ripe Cherry contains a sweet mix of Shipwreck Coconut, maraschino and Cherry Heering.

The Arches bar menu is deliciously moreish, with dishes such as salmon sashimi with yuzu ponzu and crispy leek, braised baby octopus ragu and black truffle hummus.
