Tamdhu partners with Josh Niland’s Saint Peter 

Tamdhu Single Malt Scotch Whisky has teamed up with pioneering Australian chef Josh Niland and his world-renowned restaurant Saint Peter for a limited-time dining event that brings together single malt and seafood. 

Located in Sydney’s Paddington, Saint Peter is known for its trailblazing approach to whole-fish cooking and sustainable seafood. Good Food named it Sydney’s Restaurant of the Year for 2024, while it also took out 66th place on The World’s 50 Best Restaurants extended list for 2025.

Saint Peter’s head bartender Sam Cocks is also one of the country’s best and was recently a finalist in Australia’s 2025 World Class Bartender of the Year.

For this limited-time collaboration, the Saint Peter team has crafted a bespoke, innovative seafood menu inspired by the bold, sherried richness of the Tamdhu, offering a fresh and refined take on traditional whisky pairing.

Running from 24 August to 7 September, including Father’s Day, the Tamdhu x Saint Peter experience invites guests into Saint Peter’s intimate Paddington bar to experience a bespoke three-course menu.

Guests will be welcomed with a Tamdhu whisky cocktail on arrival, followed by a three-course seafood menu, with each course served alongside a curated whisky pairing. Both Tamdhu’s 12 Year Old and 15 Year Old expressions will be featured, offering a unique opportunity to explore the brand’s signature style: rich, complex and exclusively matured in Oloroso sherry oak casks.

The menu has been carefully designed to reflect the elemental characteristics of the whisky — smoke, salinity, minerality, and heat — before considering traditional pairings. This breaks down the flavour profile of the whisky first, then builds a curated seafood menu that draws out those key notes and, in turn, is elevated by them.

Tickets are priced at $200 per person and can be booked directly via Saint Peter’s website. Bookings are available from Sunday to Thursday evening seatings throughout the event period.
