Tried & Tasted: Chablis Week at Bert’s Brasserie

Merivale is celebrating Chablis Week from 29 September to 13 October 2025, with 16 of its venues spotlighting the timeless pairing of Chablis and oysters.

In partnership with Vins de Bourgogne, Chablis Week showcases the vibrant minerality, purity, and precision that the varietal is known for, shaped by the unique Kimmeridgian subsoils and cool climate of northern Bourgogne. The Chardonnay grapes used to create Chablis draw their personality and character from a subsoil that is 150 million years old and was once a seabed.

Priced between $90-$110, patrons at Merivale venues can choose between six or 12 oysters paired with hand-selected bottles of Chablis wines.

Drinks Digest headed to Bert’s, a gorgeous bar and brasserie overlooking Pittwater and the grounds of The Newport.

The venue exudes art deco elegance, serves expertly prepared seafood and steaks and prides itself on exemplary service to match the stylish surrounds.

We started our evening with the Famille GROSSOT Chablis 2023 paired with Sydney Rock Oysters. We enjoyed sampling oysters from two regions on the South Coast, Merimbula and Wagonga Inlet. Both varieties were briny, mineral-filled mouthfuls of joy, expertly match with a mignonette dressing and lemon.

Famille Grossot is among six renowned wine producers that feature during Chablis Week, alongside William FEVRE, Domaine Antoine et Laura ROBIN, Julien BROCARD, Domaine du COLOMBIER, and PRIEURE SAINT-CÔME.

The Famille GROSSOT Chablis 2023 comes from the winemaker’s cool north and northwest facing vineyards. The bright, fresh wine features taut, well-balanced mineral flavours. It’s a reminder of just how wonderful a flinty white can be when it is crafted in expert hands.

We followed our oysters with immaculately prepared medium rare steaks, served with Diane sauce, frites and butter lettuce salad. Dessert was a shared berries and sheep’s yoghurt frozen slice with toasted marshmallow – a flavour-packed end to a wonderful meal.
