W Sydney opens Caffé Fernet pop-up bar

W Sydney is partnering with premium Italian amaro Fernet-Branca to launch a rooftop digestivo bar called Caffé Fernet.

Launching on 16 April 2026, Caffé Fernet is an Italian-inspired experience designed to carry guests from sunset drinks into the slower, more considered ritual of digestivo.

Created in Milan in 1845 and renowned for its intense, aromatic and bitter flavour profile, Fernet-Branca is made from a secret recipe of 27 herbs and spices and aged in oak barrels.

Set within Level 30’s intimate, superyacht-inspired bar, the Caffé Fernet experience will begin at sunset with an intermezzo serve of Fernet con Cola-Noir ($15), a bittersweet opener that sets the tone, alongside Ruinart Blanc de Blancs ($45) poured by the glass. As guests settle in, Level 30’s signature martini service takes centre stage, served tableside from a champagne bottle.

As night falls, Caffé Fernet will move deeper into a more expressive digestivo, with Fernet-Branca at its core. The menu explores the interplay of bitter, sweet and aromatic notes across a range of serves; from the After Dinner Mint-inspired Cavalletta ($25) to more unexpected compositions including the Biscoff-inspired Café Fernet ($25).

For those seeking something rare, a collection of vintage adds a frisson to the experience. A Vintage Negroni ($150) combines 1960s Tanqueray Gin, 1970s Campari and 1757 Cinzano Rosso, while a Vintage Martini ($100) offers a refined, time-capsule take on a classic.

The pop-up Caffé Fernet experience will run Tuesday to Saturday from 5pm for a limited time. Throughout the series, Fernet-Branca will host a rotating line-up of guest bartender shifts, spotlighting some of Australia’s most exciting talent. The first, on 28 April, sees renowned bartender Matthew Cappetta take over the bar.
