A $2 million-plus hospitality and lifestyle precinct featuring a bar, restaurant and cafe is set to transform Surry Hills, with House of Bungalow preparing to fully launch in early October 2026.
Part of the growing independent hospitality group, Bungalow Collective, House of Bungalow brings together three distinct venues under one roof, creating a seamless experience that evolves from morning coffee through to destination dining, cocktails and late-night entertainment.
Founder and Director of Bungalow Collective Binura Jayasuriya said: “House of Bungalow was always the plan.
“I’ve spent years collecting ideas, learning from different industries and travelling the world. This is where all of those experiences come together.”
Cocktail lounge The Basement features an impressive drinks program including a bespoke cocktail list and VIP bottle service. Together with a five-night music program, The Basement will open Wednesday to Sunday.
Seasoned hospitality professional ‘Julz’ Julieana Togiaono will lead the team as Nightlife & Entertainment Manager, bringing experience from world-class venues and entertainment operators including The Star.
“The Basement will bring back the energy of Sydney’s nightlife that people once knew and loved, and become the late-night destination in Sydney”, says Togiaono.
“Service touchpoints like the VIP bottle service bring that international level of entertainment and hospitality in a way Sydney has never seen before. Every guest will feel like a VIP”.
Located on the Ground Floor, The Restaurant is headed by award-winning chef Gianni Moretto. Moretto brings more than two decades of experience to the role, including launching Uma in Perth, creating Western Australia’s first fine-dining plant-based restaurant at Ten Acre Block, and most recently leading the team at Morena in Sydney’s historic GPO Building.
Leading the front-of-house team will be Veronica Prieto, who has risen through the ranks within Bungalow Collective after previously managing sister venue Bungalow Petersham.
The 80-seat restaurant will open Tuesday to Sunday for lunch and dinner, offering guests an elevated yet approachable dining experience with hook-to-plate philosophy.
Moretto will deliver a menu of bold, produce-led, modern Spanish-inspired cuisine through a distinctly global lens, with Asian and Latin American influences reflecting his multicultural background, international career and extensive travels.
“Coming from Chile with Italian heritage, then living in Spain and Australia while travelling through Mexico, Peru, Malaysia, Indonesia and Japan, every place has influenced the way I cook,” he said. “That multicultural background fits House of Bungalow perfectly.”
Moretto’s global influences will come to life through a menu that reflects his journey across continents, where Spanish tradition, Asian technique and Latin American influence converge. Hero dishes including the Smoked Eel Gilda, Peking Duck Canelons and Mochi de Turrón capture this multicultural philosophy, offering guests a dining experience inspired by the places, people and flavours that have shaped his career.
The dining experience will be complemented by a comprehensive, pairing-led wine program spanning Spain’s sherry houses and the great regions of France, Italy, Australia and New Zealand. Drops range from approachable by-the-glass pours and collector wines, including Penfolds Grange, Pétrus and Château d’Yquem.
