Callington Mill Distillery Pedro Ximenez Single Malt Whisky has won Single Malt Whisky of the Year at the International London Spirits Competition.

The 2025 competition received several thousand submissions from more than 30 countries.
London Spirits Competition evaluates entries not just on taste but also on their value for money and packaging appeal—an approach designed to highlight the bottles that truly resonate with today’s consumers and trade professionals.
This year’s judging brought together over 70 top industry experts, including Master Distillers, Master Blenders, Mixologists, and elite buyers.
London Competitions CEO Sid Patel said: “At the London Spirits Competition, a winning spirit must excel in quality, offer outstanding value for money, and be packaged in a way that truly connects with today’s consumer. What makes this competition unique is that all products are judged by the highest level of trade professionals—bartenders, bar managers, and buyers—who understand what sells and what delights customers. Our winners represent the very best of the global spirits industry.”

Created by Tasmania’s Callington Mill Distillery the winning whisky was matured in ex-Pedro Ximénez sherry casks. It features cinnamon, almond and toasted nuts aromas on the nose. The palate reveals complex layers of salty caramel, polished mahogany, dark chocolate, and chewy toffee, offering a rich and textured experience. The finish is long and fruity with lingering hints of dried dates and caramel.
The whisky was unveiled in September 2024 at The Whisky Show in Brisbane.
It’s been a winning month for Callington Mill, with its Poltergeist Citrus Gin winning Gold and being named Country Winner in the London Dry Gin category at the World Drinks Awards.

The World’s Best Spirit for 2025
W.L. Weller Antique 107 from Sazerac claimed Spirit of the Year, Whiskey of the Year and Best Spirit by Quality at the International London Spirits Awards.
