Award-winning Australian gin label Saint Juniper has distilled Australia’s love of Asian fusion Into its new Red Lime Gin 05.

Native botanicals sit comfortably alongside Southeast Asian ingredients in the vibrant new release, telling a flavour story of citrus and spice that is bright yet balanced and familiar yet fresh.

“Red Lime Gin is a meeting of cultures distilled, complex, contemporary and distinctly Saint Juniper,” said founder Paul Walton.

“It brings native citrus together with the warmth and fragrance of Southeast Asia, creating something that feels both familiar and entirely our own.”

Walton launched Saint Juniper just 12 months, with the craft distillery already attracting international acclaim.

Its Mediterranean Gin earned Gold and 98 points earlier this year at the 2025 London Spirits Competition, taking Spirit of the Year Australia, alongside Silver at the 2025 and 2024 Melbourne Royal Distilled Spirits Awards, and Gold plus Best Contemporary Style Gin NSW at the 2024 Australian Gin Awards.

Drinks Digest was recently taken through an intimate tasting of the Saint Juniper range, which features five gins that are each numbered and distilled in micro batches using Dutch-built equipment, with flavours developed slowly over several weeks.

The tasting was held at North Sydney’s Toki, with each gin expression sampled both neat and with mixers, matched expertly with a cocktail-led degustation menu.

The experience commenced with a sensational G&T featuring the Mediterranean Gin, which lived up to the hype with its blend of citrus, rosemary, bay leaf, green olives and olive leaf. 

We can also reliably report that it is magnificent in a martini.

Each gin that followed during the tasting, which also included the Original Dry, Orange & Elderberry Contemporary and Raspberry & Hibiscus Pink, was a love letter to Walton’s fascination with flavour, honed during his extensive career in the wine and spirits industry.

Our verdict on the new Red Lime Gin? It’s destined to join Mediterranean Gin on the podium—the vivid expression is redolent with luscious red finger lime, ginger, lemongrass and kaffir leaf and highly memorable. Elegant and refreshing, it shines in both crafted cocktails and simple G&Ts with lime and a ribbon of ginger.
