Wine-by-the-glass market booms in Australia

Changing drinks habits in Australia have driven a surge in wine-by-the-glass purchases in restaurants and bars.

Coravin reports the trend has resulted in Australia emerging as a significant market for its technology, recently overtaking France to become its third-largest market globally.

A survey by Coravin found 54% of Australian consumers report that they now drink more wine-by-the-glass than they did two years ago. The primary driver of the increase is the desire to explore premium wines without committing to a full bottle.

However, motivations differed generationally, with Millennial and Gen-Z drinkers reported that they were motivated by quality and diversity, while Baby Boomers reported being motivated by practical factors such as cost, health and driving considerations.

A report from Wine Business Solutions commissioned by Coravin also shows Australian venues have increased by-the-glass listings by 33% since 2021.

Once primarily considered a trade tool used by sommeliers to manage high-end inventory, Coravin now sees a 50/50 split between consumer and trade sales in Australia.

Interestingly, Coravin data shows the surge in at-home use is directly fuelled by the hospitality sector. According to its research, 60% of Australian users first discovered the technology in a bar or restaurant.

This shift in Australia and around the global to drinking wine by-the-glass has seen Coravin’s sales experience double-digit revenue growth over the last two years.

Last month, Coravin announced the sale of its two-millionth system. Used in approximately 70% of the World’s Best Restaurants and every three-hatted venue in Australia, as of 2026, one glass of wine is poured using Coravin every second of every day around the world.
