House of Suntory’s Roku Gin has announced a delicious collaboration with the co-founder of Three Blue Ducks, Darren Robertson.
The renowned chef and author will bring a taste of the restaurant group’s new Bellingen outpost to Sydney for two nights, on November 10 and 11, as part of a one-off Roku Gin experience at Three Blue Ducks Rosebery.
The exclusive pop-up event will feature a bespoke four-course menu crafted by Robertson, designed to take diners on a journey through every season, featuring Asian-inspired flavours and paired with Japanese gin cocktails.
Throughout the courses, guests will be transported to each season along with different parts of Asia with each dish and guided through the flavours by Robertson and Roku Gin Brand Ambassador James Buntin.
Three Blue Ducks opened The Lodge in Bellingen in July 2023, with the venue offering a new spin on the team’s classic dishes. The restaurant is set among 16 acres of manicured gardens and nestled between Bellingen’s rainforest and surf beaches. Its focus is on working with local producers and farming regions to source ingredients and produce to create simple, ethically sourced dishes.
Robertson said: “As a chef, being in tune with nature and focusing on seasonality to work with ingredients at the peak of their season is something I’m truly passionate about and Roku Gin shares those same values when it comes to the making of the spirit.
“This partnership with Roku Gin is a no-brainer given our shared approach to cooking and creation, along with my previous experience in Japanese cuisine. And now having the opportunity to bring the Asian cooking techniques from the menu at our new Bellingen restaurant to Sydney is so exciting.”
