A new hospitality group has launched in Sydney with Morrison’s Oyster Bar & Grill and Whalebridge as the foundation of its portfolio.
The Sunday Co hospitality group is headed by former Merivale Chief Operating Officer Brett Sergeant and industry executive James Wicks, who are already making plans to expand their current portfolio in Sydney.
“We started Sunday Co. with the aim to create memorable guest experiences,” said Wicks.
“Sunday is a feeling, the best day of the week, slower, more special, a day for friends and family. Sunday Co. makes everyday feel like Sunday,” said Wicks.
The Morrison is undertaking a renovation and will officially relaunch on 28 November, along with tweaking the name to Morrison’s Oyster Bar & Grill. Morrison’s will offer a classic produce-driven menu featuring signature oysters and hand-selected in-house aged beef.
Whalebridge also features a produce-driven menu with a relaxed approach to French dining. Offering an all-day dining experience, French bistro classics are served in a sun-drenched setting, overlooking the white shells of the Opera House on the water’s edge in Circular Quay.
Sergeant said: “Our aim is to create timeless institutions with exceptional food and vibrant bars in Sydney’s CBD, creating lasting memories.”
