With International Margarita Day approaching on 22 February, Sydney’s Pier Bar has created the cocktail combo we didn’t know we needed in our lives: the Avocado Mezcal Margarita.
Pier Bar is located at Pier One Sydney Harbour and it is spicing up the classic with washed mezcal and avocado syrup. And it kinda makes sense considering that there’s nothing better to snack on when you’re sipping a Margie than a bowl of guacamole.

Here’s how to make an Avo Margie at home …
Avocado Mezcal Margarita
40ml Vida Mezcal
20ml avocado syrup*
30ml lime juice
10ml agave syrup
Salt (for glass rim and garnish)
Avocado (for garnish)
Chilli flakes (for garnish)
Method: Shake all ingredients in cocktail shaker. Fine strain into glass over cubed ice (salt rim the glass prior by dipping into lime juice and salt). Garnish with slice of avocado, with sprinkled mixture of blended chilli flakes and salt
*Avocado syrup is made by blending one avocado with a mixture of 20% sugar and 10% salt (20g sugar and 10g salt per 100g of avocado). Leave to sit for four hours before straining, add a splash of agave syrup and 100 ml of water to dilute.
