Just a year after launching, Tasmania’s Waubs Harbour Distillery is winning international awards and celebrating surging sale, including its Limited Release PX Sherry cask whisky selling out online last week.
Bottled at 51%, the PX Sherry is Waubs Harbour’s first pure Sherry cask whisky and was made with the first cask to be coopered on-site at Waubs Harbour. It was finished in a rare 300L premium Pedro Ximenez Sherry cask from Dutschke Wines in the Barossa Valley after initial maturation in Australian McWilliams Apera Sherry casks.

Waubs Harbour Distillery was founded by a Tasmanian family – brothers Tim and Rob Polmear and Tim’s wife, Bec. Rob’s previous experience includes being Head of Production for Lark Distillery and Head Distiller of Overeem Whisky.
“The Apera cask brings across a bunch of apple creams and beautiful biscuity malt and the PX cask brings all these sticky raisin, date-like qualities,” Rob said of the PX Sherry release.
“Together, you get a seamless transition and this big depth and juiciness. With the Waubs oils as well, there’s a beautiful complexity that comes together into a beautiful, long, lasting finish. It’s delicious.”

There are only 557 bottles in the entire release of the PX Sherry whisky, with a select few available at venues around Australia and some for visitors to the distillery.
Earlier this month, Waubs Harbour’s Founder’s Reserve whisky won a Gold medal with a score of 93 at the prestigious San Francisco World Spirits Competition.
It follows Waubs Original whisky being awarded the Category Winner Gold at the World Whiskies Awards 2024 in February.
“We’re thrilled to take out first place in our category and proud to represent Australian Small Batch Single Malt Whisky on the world stage,” the distillers said.
The distiller was also awarded the highest accolade at the 2023 World Whisky Masters – a Master medal for its Port Storm whisky, as well as Gold medals for its Waubs Original and Founder’s Reserve whiskies.
