Hickson House releases Oyster Shell Gin

Hickson House has released an Oyster Shell Gin, which aims to capture the essence of the pristine Australian coastline in a bottle.

Distilled using a host of native botanicals and infused with crushed Sydney Rock Oysters, the resulting small-batch gin has a smooth and creamy texture with a delicate hint of salinity and vibrant citrus notes.

Made using Hickson House’s multi award-winning Classic Dry Gin, the savoury spirit uses native Australian ingredients including locally sourced Sydney Rock Oysters. The liquid’s subtle salinity is complemented by seaside botanicals and notes of citrus including old man saltbush, seaweed, and tarragon as well as bright citrus notes from native finger lime and ruby grapefruit.

Hickson House Head Distiller Tim Stones said: “Gin is a very sociable spirit already, whether you’re celebrating with friends and family or simply enjoying a quiet night at home, it mixes with a lot of things. It really needs to be versatile but gin enthusiasts are looking for a liquid that transports them beyond the bottle.

“Matching flavour profile, intensity and drinking experience to capture a feeling and place is really what we aimed for with the Oyster Shell gin and we wanted to create a sea-to-glass texture and taste. Each of the botanicals are selected from seaside locations across Australia to bring to life this hand-crafted spirit, and tell a sensory story of the diversity of flora and fauna that makes our coastline so unique.”

Hickson House Co-Founder Mikey Enright says the new gin reflects the provenance of the Hickson House brand, housed at the foot of the Harbour Bridge.

“Our small-batch Oyster Shell gin really epitomises the brand ethos of ‘Made of Australia’ by using locally sourced ingredients,” he said.

“With our distillery nestled at the edge of Sydney Harbour, it was important for us when creating the gin to capture the essence of the pristine Australian waters. 

“With the briny minerality of the crushed Oyster Shells, each sip of the gin will transport you to one of the best places in the world – our home – the iconic Australian coastline.”

This savoury craft gin complements fresh seafood with the subtle salinity and herby flavours balancing out richness of the cuisine, while letting the coastal shine through. The recommended serve is in a classic martini or refreshing gin and tonic.
