5 fabulous organic sparkling wines for summer

Organic wine and spirits website FAB has shared its favourite festive sparkling wines that cater to conscious drinkers.

FAB – which stands for “flesh and blood” – is the brainchild of Handpicked Wines owner William Dong (below), who was inspired to start the website after seeing the benefits of implementing organic practices at his vineyards.

“As we converted Handpicked Vineyards to organic practices I witnessed a remarkable revival on the land where we farmed,” he said.

“The once dead, dry earth regained its vibrancy to blossom with life – we saw the bees, birds and restored biodiversity to the area. I knew at that point I wanted to champion producers who embrace a balanced and natural approach to viticulture, focusing on harmony within the vineyard rather than relying on intervention.”

These are Dong’s favourite festive sparkling wines available on FAB, for drinkers seeking wines that aim to respect the land they are crafted from.

Jasmine Monet – Organic Blanc de Blancs NV (RRP $34)

 “I love how this wine balances fresh, vibrant flavours like green apple with a refined complexity—it’s absolutely stunning,” said Dong. “Plus, their commitment to sustainability and caring for the unique terroir of the Andes really speaks to me.”

Champagne Elemart Robion – VB03 NV (RRP $135)

“If you’re going to enjoy a champagne, it should be one that truly reflects its roots,” said Dong. “The VB03 NV is incredible—its minerality and elegant flavours of lemon and wild strawberry are unmatched, and I love how their vineyard practices, like natural grassing and herbal protections, honour the terroir so beautifully.”

Vinedos Balmoral ‘Edone’ – Cuvée De Maria 2019 (RRP $27)

“Cuvee de Maria is everything I love in a sparkling wine—its exotic fruit and herbaceous notes are beautifully balanced with a lively, lasting elegance,” Dong said. “What makes it even more special is knowing it comes from vines nurtured at such high altitudes, where meticulous care and respect for the land shine through in every sip.”

Castagna – Sparkling ‘Allegro’ Ancestrale 2018 (RRP $50)

“Allegro is a must-pick Aussie wine from FAB, with its strawberry, lemon, and subtle vanilla notes perfectly complemented by a creamy texture, vibrant acidity, and a saline finish,” Dong said. “Its biodynamic farming practices really highlights the granitic-loam soil’s minerality, and vibrant character, making it a standout.”

Wild Nature – Prosecco DOC Rosé Spumante Brut Nature Millesimato Bio 2020 (RRP $30)

“This Wild Nature Prosecco Rosé is a true reflection of its environment—light pink with delicate berry and citrus notes, it’s elevated by the added texture of Pinot Noir, bringing depth and a touch of savouriness,” said Dong. “The biodynamic practices and commitment to biodiversity really shine through, making this sparkling wine a perfect example of how organic farming can enhance both the land and the wine.”
