Four Pillars’ popular Martini Collective has returned for its third year, running from 19 May to 22 June 2025.
In celebration of the world’s most iconic cocktail – the classic Martini – Four Pillars is teaming up with some of Sydney and Melbourne’s best bars and restaurants to offer an aperitif-style Four Pillars Olive Leaf Gin Mini Martini, paired with a curated snack unique to each venue.
Ten venues in Sydney have joined the Collective. Returning favourites such as Shell House, The Charles, Le Foote and NOMAD are back, joined by exciting new additions including Middle Eastern favourite NOUR, the newly opened Bar Julius and the stunning International at Martin Place.
The series returns to Melbourne for a second year with Bar Bellamy, LUI Bar and Reine back on the list, alongside newcomers, Hazel, Society, Grill Americano and Bar Liberty joining the incredible line-up.
At NOUR, guests can savour a refined take on anchovy toast, where Cantabrian anchovy, tomato ezme and toasted pita come together in a bold, salty bite that complements the Martini’s clean, savoury profile.
Meanwhile, Society offers a classic yet elevated pairing with its Smoked Tomato Sourdough Crostini – a balanced mouthful of umami and acidity that is the ideal companion to enhance the accompanying aperitif.
For the first time in the history of the event, the Martini Collective will run through World Martini Day, Saturday 21 June.
