G.H. Mumm’s private dining experience is returning to the Melbourne Cup Carnival for a sixth year, this time in collaboration with Sydney’s Olympus Dining.
Following its debut in 2019, the newest iteration of G.H. Mumm’s exclusive private dining experience will see guests transported across the Mediterranean Sea, setting sail in G.H. Mumm’s Private Yacht.
Maison Mumm’s French hospitality will be complemented on board by a vibrant menu of Greek inspired flavours from Olympus Dining.
Since opening in December 2024, Olympus Dining has drawn national attention for its unique take on traditional Greek flavours and its immersive, architecturally bold setting in Redfern — centred around a 50-year-old bougainvillea tree beneath a retractable glass oculus ceiling.
As part of the 2025 partnership, Flemington racegoers will experience two bespoke dishes that reflect the distinctive dining style of Olympus Dining founder Jonathan Barthelmess. The dishes will be crafted exclusively for guests of G.H Mumm’s private dining space, an intimate experience that seats just 12 guests across four sessions each race day of the Melbourne Cup Carnival.
Taking inspiration from the spirit of the Melbourne Cup Carnival, and the feeling of being aboard a yacht on sparkling waters, each dish has been designed to be savoured with cuvées from G.H. Mumm’s RSRV range.

The RSRV Blanc de Blancs 2015 will be matched with Olympus Dining’s Ntomata tart — a delicate, crispy, buttery filo pastry topped with parmesan custard and heirloom tomato.

The Olympus Dining team will also pair RSRV Rosé Foujita with crumbed lamb cutlets, served with an G.H. Mumm Reserve beurre noisette and a shared side of patátes – baby chat potatoes tossed in seaweed butter.
“The opportunity to partner with G.H Mumm on an event as iconic as the Melbourne Cup Carnival has been such a wonderful experience. To not only be able to bring a taste of Olympus Dining to Victoria but to be able to do it on such a special occasion is so exciting,” said Barthelmess.

More than 100,000 glasses of G.H. Mumm are likely to be enjoyed across the carnival period at Flemington Racecourse, with an exclusive list of guests joining G.H. Mumm Birdcage marquee.
