If you’re seeking a wow-factor venue to sip cocktails in Sydney, you’d be hard-pressed to beat Aster Bar.
Located on Level 32 of the InterContinental Sydney, the venue boasts literally jaw-dropped, 270-degree panoramic views of Sydney Harbour and an inventive cocktail menu that further elevates its destination-drinking vibe.
Drinks Digest sampled the bar’s new Signature Cocktail Menu, which features 10 imaginative creations that aim to capture the spirit of the shoreline, the richness of the earth and the rhythm of the tide.


Each cocktail is a sensory journey, layered with native ingredients and designed to surprise. It was fascinating to watch the bartenders mix their magic, with each creation resembling a liquid artwork.


We ordered the Golden Pearl, an elegant blend of Cocchi Rosa, St Germain, Champagne Solution and nori ($32, above left) and the Wave, featuring Altamura Vodka, Samphire, Pear, Verjuice, Bay Leaf, Shiso ($32, above right); and the .
On our next visit, it would be difficult to decide between the Blooming, made with vodka, green apple and apricot, or the Baguette & Barrel, which reimagines bourbon with parsnip and baguette liqueur … just to name a few.
However, the menu’s list of unexpected ingredients only tells half the story. The Wave appeared at our table in a shell-shaped glass with a frothy garnish suspended above it. The Golden Pearl was accompanied by an oyster-shaped vessel filled with sweet caviar-style balls and topped with a smoke bubble.
Our favourite cocktail was the Golden Pearl, which featured a vibrant bittersweetness that was perfectly refreshing after a busy week.

Aster also offers a selection of refined bites on its bar menu. We chose the moreish Prawn Katsu Sandos with Curry Mayo and Cabbage ($30) and Salt and Vinegar Skin on Fries with Aioli ($18).
Our booking was from 7-8.30pm, which was perfect timing to see the last rays of the sun fall on Sydney Harbour Bridge and the Sydney Opera House, then watch the city light up as night fell.
