Felons Brewing Co. has unveiled its latest barrel-aged twin release — Amber Plum Cola (Oude Bruin) and Yuzu Mist (Fruited Saison).
Aged for up to 22 months inside the barrels of Felons Barrel Hall, the limited release continues the brewery’s exploration into oak, time and wild fermentation.
Born on the Brisbane riverfront, Felons Barrel Hall remains the spiritual home of the brewery’s most creative pursuits — where beer is shaped not only by time and timber, but by sound, art and environment. Inside the Hall, thousands of litres of beer rest in a diverse collection of oak barrels, each previously housing wine, whisky, or beer, contributing layers of complexity and character.
As the program grows, so too does its footprint — with barrel aged releases now also finding a home at Felons Barrel Room at Manly Wharf, bringing this evolving expression of Felons to Sydney’s Northern Beaches and offering a dedicated space for guests to experience the beers.
Felons Brand Director Dean Romeo said: “These beers are an expression of patience and possibility. Each release allows us to further explore how flavour can evolve through time and how our environment leaves its own fingerprint on every barrel.”
A modern interpretation of the classic Belgian style, Amber Plum Cola is a carefully conditioned Oude Bruin designed to soften sharp acidity and deliver a more rounded, expressive profile.
Aged across a complex blend of American oak barrels — including ex red wine, ex-Starward whisky and previously used Felons Barrel Aged Crisp Lager barrels — this beer reveals layers of plum, raisin and vanilla over a gently tart backbone. Expect a rich, Christmas pudding-like character balanced by a clean mid-palate and a bright, lip- puckering finish.
Brewery Director Tom Champion said: “This beer really highlights the power of extended conditioning. We’ve taken a style known for its sharpness and refined it into something more rounded, layered and approachable — while still keeping that
signature edge.”
Bright, zesty and deeply aromatic, Yuzu Mist builds on the success of Felons’ previous barrel aged saisons, evolving the style through extended ageing and vibrant citrus expression.
Rested in Slavonian white oak and ex-Chardonnay barrels from Koerner Wines, the beer is conditioned on locally grown Willyama yuzu from regional NSW. The result is a lively and refreshing saison bursting with notes of lime, lemon and pear,
underpinned by subtle oak complexity.
“To balance the richness developed in barrel, we leaned into citrus,” Champion said. “The yuzu lifts the beer beautifully, bringing freshness and energy while allowing the oak character to shine through.”
The small-batch beers are available in bottles and on tap at Felons venues, including Felons Barrel Hall in Brisbane and Felons Barrel Room at Manly Wharf, as well as select stockists nationally.
