The Maybe Cocktail Festival returned to Sydney for its fourth year from 14–19 April 2026, featuring 25 of the world’s most talked about bars and bartenders.
And two of our favourites were Lucila Calichio and Lucía Miguez from Tres Monos in Buenos Aires, Argentina. Coming in at number 10 on the World’s 50 Best Bars list for 2025 and scooping Best Bar in South America 2025, Tres Monos was described by the judges as “the small indie bar that makes a big impact”.
Great thought and energy also goes into local sourcing, with Tres Monos’ cocktails highlighting local ingredients and the bar even partnering with Argentinian producers to create its own-label spirits and wines.
At the Maybe Cocktail Festival, Tres Monos teamed up with Morris Whisky to create Plaza Once, the bar’s take on an ‘Australian’ Manhattan, one of Drink Digest’s favourite classic cocktails.
Instead of using a classic rye base, Calichio and Miguez switched in 36 SOUTH Double Grain Whisky and leaned into fortifieds with a balance of Morris of Rutherglen Apera and DOM Benedictine. It’s a simple twist on a familiar format that really delivers.
36 SOUTH Double Grain Whisky is crafted at the latitude of the Morris distillery and made using local wheat and barley, together with water sourced from the snowy mountains. And it recently won a Gold Medal for Best Australian Blended No Age Statement at the 2025 World Whiskies Awards.
Here’s the recipe:
Plaza Once
- 60ml 36 SOUTH Double Grain Whisky
- 15ml DOM Bénédictine
- 15ml Morris of Rutherglen Pale Flor Apera (or Dry Sherry alternative)
Method: Combine all ingredients in a mixing glass and stir over ice. Chill a Nick & Nora glass with crushed ice, then empty. Strain ingredients into the chilled glass. Garnish with an orange peel coin. Serve and enjoy.
