Fast-distilled Breaking Barrels launches

Everstill Spirits has released its first brand, Breaking Barrels, matured in just 30 days using proprietary Steel Barrel Technology.

Breaking Barrels aims to delivers the depth and character of aged whisky, without the wait. With no added colours or flavours, it may look, taste and drink smooth like a 20-year-old spirit … but Everstill describes it as proudly ‘Not Whisky’.

Everstill CEO Luis Senra (above) said: “Until now, delivering this level of quality meant long ageing times and higher costs that pushed up price.

“With Breaking Barrels, we remove the wait and deliver the same depth and smoothness at a far more accessible price point.

“Breaking Barrels is distilled using traditional methods, just like most dark spirits, but it’s the maturation that sets it apart. Using Steel Barrel Technology, we recreate the key conditions of barrel ageing—temperature, pressure and real oak interaction. The difference is, instead of putting the spirit in the barrel, we put the barrel in the spirit!

“It also unlocks endless innovation possibilities, like the ability to explore different wood types and flavour influences that would be impossible using wooden barrels.”

On the palate, Breaking Barrels offering layers of vanilla, caramel and spice, with a smooth mouthfeel. It’s designed to be approachable for new drinkers, yet complex enough for seasoned whisky fans.

Additional Everstill products are set to be released in the coming months, including Canesnap Dark Cane Spirit and Golden Hour Aged Vodka, each showcasing how Steel Barrel Technology can be applied across categories to create distinctive, modern spirits.

Available in 200ml, 700ml and 5lt containers for the on-premise, Breaking Barrels is now available at select Thirsty Camel stores in Victoria, and Cellarbrations and Bottlo stores in NSW and QLD.
