The Glendronach is bringing an immersive whisky foraging trail to Sydney later this month, inviting guests to step beyond the tasting glass and into the Scottish Highlands

The Glendronach Presents: An Ode to The Highlands will be hosted at the Ace Hotel from Friday 24 July to Sunday 26 July.

Part hidden whisky bar, part sensory foraging trail, the experience includes four immersive chapters inspired by The Glendronach’s Masters Anthology Collection, exploring the whisky through flavour, aroma, sound and texture while discovering the story behind the distillery’s 200-year history.

As people move through the experience, they will be introduced to a series of curated food and The Glendronach cocktail pairings which have been developed in collaboration with Ace Hotel Sydney’s Culinary Director Isobel Whelan-Little. 

The experience begins in the Highlands House bar, where guests are welcomed with cocktails featuring The Glendronach’s signature 12 Year Old Scotch to whet the palate.

Then, the trail begins with its first stop, Ode to the Valley, which invites guests to forage among moss, foliage and natural textures to uncover their first dram of The Glendronach, paired with a palate cleanser, as they are transported through a Highland-inspired soundscape.

From there, guests continue into Ode to the Embers, where an exclusive pairing created by Isobel Whelan-Little showcases smoked jersey curd, charred beetroot, scorched bonito, ponzu, daikon, ginger and citrus – designed to complement the warmth, richness and depth of the whisky.

The journey then shifts into Ode to the Dark, where sight gives way to scent. Guests can explore the aromas that define The Glendronach through a bespoke immersive room fragrance created by Scottish scent label JORUM STUDIO and guided nosing experience, before foraging through the landscape one final time to uncover a hidden whisky-infused chocolate.

Returning to Highlands House, guests are invited to continue exploring with additional whisky tastings, signature cocktails and elevated snacks available from the bar. Alongside The Glendronach’s celebrated single malts, guests can enjoy serves including the Spanish Highball and Bramble Sour, accompanied by a menu of contemporary bar snacks curated by the Ace Hotel team.

Visiting Australia for the first time in three years, The Glendronach Master Blender Dr Rachel Barrie said the experience offers whisky lovers an entirely new way to connect with the distillery.

“Celebrating 200 years is an extraordinary milestone for The Glendronach,” she said. “For generations, our whisky has been shaped not only by craftsmanship, but by the landscape, seasons and natural character of the Scottish Highlands. An Ode to The Highlands brings those influences to life beyond the glass, inviting guests to experience our story through flavour, aroma and atmosphere in a way that’s never been experienced before.”
