Chablis Wines and Merivale have reunited for the second edition of Chablis Week from 31 August to 13 September 2026.
Seventeen Merivale venues are pouring a curated selection of Chablis, pairing the region’s signature minerality with
Sydney Rock Oysters, as well as a few playful twists beyond the shell.
At its heart, Chablis Week is built around a timeless match: crisp, mineral-driven Chablis and freshly shucked Sydney Rock Oysters.
Guests can choose between six or 12 Sydney Rock Oysters, matched with hand-picked bottles that trace the full range of the region, from the bright, easy-drinking style of Petit Chablis through to the depth and structure of Chablis Premier Cru.
This year, two new venues are putting their own spin on the format: Club Rose Bay will pair its Chablis with cooked Tiger Prawns instead of Sydney Rock Oysters, and Establishment Main Bar will serve theirs alongside Roon’s Fried Chicken – both true to the way Australians love to eat.
Chablis Week also spotlights an expanded line-up of producers this year, including William FÈVRE, Gilbert PICQ, Famille GROSSOT, Domaine Antoine et Laura ROBIN, Julien BROCARD, Château de FLEYS, Domaine du COLOMBIER, PRIEURÉ SAINT-CÔME, and La CHABLISIENNE.


Drinks Digest celebrated the launch of Chablis Week at Little Felix, sampling Petit Chablis, Domaine Antoine et Laura ROBIN, Petit Chablis, Domaine du COLOMBIER, Chablis, Gilbert PICQ, Chablis, Famille GROSSOT and Chablis Premier Cru, Côte de Léchet, Julien BROCARD.


All five were superb, with the Chablis Premier Cru, Côte de Léchet, Julien BROCARD being truly exceptional.
Chablis lovers can enjoy a bottle of the intensely seductive Julien Brocard Premier Cru paired with a dozen oysters for $200 at mimi’s and Bert’s during Chablis Week.
