InterContinental Sydney’s rooftop bar Aster has launched a new experiential menu that takes cocktail lovers on a journey from Earth into deep space.

Developed by the hotel’s Director of Bars Mattia Arnaboldi, Ascend, Expanse is inspired by the layers of the atmosphere and the mysteries of deep space.

The menu unfolds across two acts and 15 cocktails, each representing a different point along the journey. Unexpected ingredients, in-house distillation, progressive techniques, shifting textures and interactive presentation push beyond the traditional cocktail experience.

Drinks Digest was excited to sample the menu this week, as Aster is truly one of the city’s best spots to sip a cocktail with its spectacular views and innovative menus.

Beginning on Earth, the first 10 cocktails in Act I: Ascend take you on a journey through the layers of the atmosphere.

The journey starts with ‘Grounded’, an intentionally savoury, earthbound combination of tequila, heirloom tomato, avocado, yoghurt and herbs. As the inspirations move further from Earth, familiar flavours evolve into increasingly imaginative and unexpected expressions.

Our favourite among the Ascend selection was the Particles Martini with Papa Salt Gin, Manzanilla sherry, nectarine mead, lemongrass, grains of paradise, saltbush and clay. The flavours were perfectly balanced and umami forward. It would be difficult to stop at just one!

Act II: Expanse has a focus on more abstract and unexpected expressions. Inspired by celestial bodies and cosmic phenomena, flavours become bolder, combinations become more unconventional and the cocktail experience becomes more experimental.

Fans of savoury cocktails will be intrigued by the flavours in the Aster-Belt, which features Glenfiddich 12, sesame, watercress, galangal and Kisekirei Junmai sake.

Located on Level 32 of InterContinental Sydney, the luxury rooftop bar is named for its connection to the stars. It offers 270-degree panoramic views of Sydney Harbour, from the Sydney Opera House to the Harbour Bridge. Learn more here.
