Sydney’s Bacar Restaurant & Bar has unveiled a new all-day menu featuring breakfast cocktails to kick start the day.
The venue’s mixologists have created a cocktail menu designed to be light and refreshing before 11am. Vodka for Breakfast reimagines the morning pick-me-up with Ketel One vodka, cold-brew coffee and coconut water; while the Guava Bellini pairs guava purée and St-Germain elderflower liqueur with Prosecco.
Admittedly, pre-midday cocktails aren’t an entirely new concept. The Mimosa, Bloody Mary and Bellini have been popping up on brunch menus for decades.
The Breakfast Martini was also invented in 1997 by internationally acclaimed bartender Salvatore Calabrese, using one of the breakfast’s most iconic ingredient: orange marmalade.
Made with Cointreau, The Botanist Gin, fresh lemon juice and orange marmalade, the cocktail is shaken to perfection and served in a coupette with orange wedge for the finishing touch.
Admittedly, while the inspiration for Calabrese’s cocktail came after having marmalade on toast for breakfast, he didn’t plan on serving it to customers in the morning. Cointreau suggests it is the perfect digestif and best enjoyed in autumn.

Bacar has matched its breakfast cocktails with a contemporary brekkie menu that combines classics with lighter options and a strong vegetarian and vegan selection.
Located on the ground floor of Pullman Sydney Olympic Park, Bacar’s new menus are available on weekdays from 6-10:30am and weekends from 6-11am. Espresso Martini at 6am anyone?
