The former Group Sommelier of Merivale, Adrian Filiuta, has unveiled Hunters Hill Wine Room on Sydney’s Lower North Shore.

The boutique store showcases more than 1000 wines, spirits and other beverages sourced from Australia and across the globe.

From classic Chablis to Tasmanian Pinot Noir, the ever-evolving collection spans diverse regions, including unique finds from Sicily, Portugal, Hungary, and South America. With a strong focus on Australian wines, Hunters Hill Wine Room also houses a sizable collection of local wines sourced from up-and-coming and ethical winegrowers.

As one of just six Master Sommeliers in Australia and among the esteemed less than 300 worldwide, Filiuta brings over two decades of global expertise to Hunters Hill Wine Room. Filiuta spent 11 years with Merivale in 2022, during which time he oversaw wine programs for more 70 venues.

Filiuta said his commitment to providing a personalised experience – honed throughout his experience at restaurants ranging from Mimi’s, Mr Wong and Fred’s to The Paddington and Totti’s – helps him guides customers in selecting the ideal wine or beverage for any occasion. This extends to weekly wine tastings and ‘meet the winemaker’ events, offering locals a chance to learn more about wine and the art of winemaking.

With a passion for mentoring the upcoming generation of sommeliers, Filiuta actively participates in the Court of Master Sommeliers Oceania facilitating courses and examinations to share his expertise.

Filiuta said: “I’m excited to bring this new sommelier-like experience into a boutique retail space. The wine world is vast and sometimes overwhelming for those wanting to dip their toes in a little further.

“I hope to create a more down-to-earth and approachable experience for consumers where I can impart my passion and expertise and help make the journey into wine exploration both enjoyable and enlightening for all”.
