Avocado is the star of a new cocktail menu at Sydney’s Mejico, with bartender Bear Murphy ingeniously incorporating every part of the fruit, including the pit, into five unique concoctions.
Murphy, who has previously worked at Lobo Plantation and Door Knock has created the ‘Bananavo Coladavo’, a twist on a tropical Pina Colada, featuring tequila, avocado puree, banana puree, pineapple juice and coconut milk. The avocado puree adds a delicious touch of textural creaminess.
Topped with avocado and strawberry foam, the ‘Cute Lil Tart’ is made with tequila, sour mango, and horchata. The avocado foam is a luxurious blend of avocado flesh, avocado orgeat syrup, coconut milk and aquafaba.

‘Bird In A Tai’ is a play on a smokey Mai Tai with the extra smokiness from a homemade avocado pit orgeat syrup, which has been crafted by crushing and toasting avocado pits until they turn bright orange.
The ‘Avo Old Fashioned’ is short and chocolatey. It features avocado washed tequila, chocolate mezcal, chocolate bitters, served with a frozen avocado pit ice cube, a milky way chip and a chocolate pearl.

Finally, the ‘Pitt Street Martini’ combines avocado washed tequila, a white vermouth blend and orange bitters, garnished with a drop of avocado oil for a smooth finish.
The menu launched this week in celebration of National Avocado Day in partnership with Australian Avocados. A limited edition Australian Avocado pop up will run at Mejico from 31 July to mid-September.

Executive Chef of Sam Prince Hospitality Group, Amanda Fuller, has created 10 dishes that hero Aussie avos in flavoursome and unique ways. The set menu kicks off with Mejico’s famous table-smashed guacamole, served with plantain chips for the ultimate guac scoop. Next up are bite size jalapeno poppers stuffed with avocado and kombu cream cheese, followed by prawn and corn croquette tacos with grilled avocado aioli and yuzu.
For the mains, Amanda is serving up roasted achiote spiced beef cheeks paired with avocado and peanut mole, purple cauli-blossom, pea tendrils and topped with an avocado tapioca cracker. Vegetarians will love the chipotle eggplant, featuring macadamia and avocado ricotta and pistachio dukkah.
To finish on a sweet note, Mejico will serve indulgent cinnamon churros with a creamy avocado and milk chocolate mousse.
