Mary’s has officially launched its first outpost on Sydney’s North Shore, with the doors opening at the Victoria Cross Station in North Sydney.
The design is in keeping in Mary’s spirit but features their first open kitchen layout.
The core idea that guided the design of Mary’s VX is to use the natural theatre of a working kitchen to build a sense of connection and community for guests. Channelling the great ramen joints of Tokyo, tapas bars of Barcelona and diners of the American Midwest, the kitchen and its counter are the dominant feature, creating a sense of transparency and togetherness.
Mary’s Co-Founders Jake Smyth and Kenny Graham said: “We want our guests to see and understand why Mary’s is one of the best burgers in the world-incredible Aussie beef from the Gippsland, still produced in-house, with techniques refined over the past decade to deliver our iconic,5 napkin, grill-thrillers.
“Pair that with a friendly face, cheeky joke and a cold beer and we know Mary’s is something Sydney can be proud to call its own.”

Mary’s VX will also become home to the ‘Grumpy Clucker’, a first collaboration with Grumpy Donuts. Exclusively available for dine in only, Double-Crunch fried chicken will be sandwiched between a Double Glazed Grumpy’s donut, with Sweet n Tangy sauce and Mary’spickles ($15 solo, in store only).
“We have been very long-time fans of all things Grumpy-from their donut hole in wall in Camperdown, to the brilliant Valentinas,” Smyth said.
“I had the idea over a team breakfast at Valentinas a while back, and have been badgering owner Elise Honeybrook for a year to make this collab possible. Now it’s here and its weird and very delicious and I’m very happy! Sweet, salty, crunchy, savoury, spicy perfection.”
To celebrate the launch of Mary’s VX, P&V Wine & Liquor will have a special pop-up bar in the Victoria Cross concourse for four-weeks on Thursday evenings and Saturday afternoons.
