First bar announced for Sydney Fish Market development

Inner-west institution Dirty Red has been announced as the first operator to open a bar at the new Sydney Fish Market.

The development will transform the foreshore of Blackwattle Bay will soon be home to some top names in the hospitality world as the new space fills with new speciality food retailers and restaurants.

The team at Dirty Red will take things up a notch with an extensive bar and cocktail menu and a variety of shared plates, focussing on the best local produce and taking full advantage of the beautiful sunsets over Blackwattle Bay.

Among other Sydney food operators joining are Malaysian favourite Ho Jiak, Luke Nguyen who is opening a flagship Southeast Asian restaurant with Doltone hospitality group, and local Enmore gelato favourite Cow & the Moon.

Another venue called The Japanese Collective will feature ramen, donburi, seafood BBQ and a Sake Bar. It is backed by Hidetoshi Tsuboi, Libras Ting and Takeo Muramoto, who between them are responsible for delivering some of the most awarded Japanese concepts in Sydney and Japan including Hakatamon Ramen, Tsukiyo Street Food and Sekka Dining in Sydney and Kamameshi Ichie and Patisserie Ichi in Hokkaido, Japan.

They’ll be joining existing operators such as Claudio’s Seafood, Getfish, and Christies Seafood who will relocate to the
new building once construction is finished.

A major construction milestone has been achieved, with the first 40 of 406 signature fish scale roof cassettes installed. These unique features will create the impression of a gentle wave-like canopy whilst also generating electricity for the markets.

Placemaking NSW has carefully selected food and beverage retailers to cater to a variety of customers, making sure there are different price points so you can grab take-away fish and chips or plan a fine dining at a deluxe five-star meal overlooking the harbour.

The new Sydney Fish Market is key to the transformation of Blackwattle Bay, delivering a waterfront promenade, more than 6000sqm of public space, 12,000sqm of retail space and improved pedestrian and cycling links.
