Wildbrumby releases Dandelion & Honey Schnapps

Wildbrumby Distillery has announced the seasonal launch of its limited-edition Dandelion & Honey schnapps.

The unique springtime schnapps features a blend of homemade dandelion syrup crafted from handpicked wildflowers and alpine honey sourced from local beekeepers. The result is a smooth, herbaceous liqueur that rests on a sweet base of pink lady apple schnapps.

The exclusive release is only available during the short window of dandelion bloom, with its inspiration coming from the distiller’s childhood memory of an old German farmhouse recipe that involves boiling dandelion flowers down with sugar until the resulting syrup reached a honey-like consistency.

With an ABV of 18.5%, the liqueur can be sipped chilled, poured over ice cream or mixed into a cocktail.

Established in Jindabyne in 2003, Wildbrumby was one of the first craft distilleries in Australia. However, its inspiration comes from the breathtaking alpine region of Kitzbühel, Austria, where founder Brad Spalding met his future wife Monika and learned the art of distillation from her grandfather, who distilled schnapps on his mountain farm.

At Wildbrumby Distillery, the spring menu will feature a variation of the Beez Kneez cocktail, which blends Wildbrumby Classic Gin, fresh lemon juice, and honey with 30ml of Dandelion & Honey schnapps. Other cocktail ideas include a
Dandelion & Honey schnapps with Ginger Ale and a shaken Dandelion & Honey Sour.
