Melbourne’s The Royce Hotel is set to host an exclusive one-night-only cocktail degustation in partnership with Maybe Sammy and Perrier Australia.
On 12 September 2025 its Showroom Bar will welcome cocktail heavyweight Stefano Filardi from one of The World’s 50 Best Bars 2024, Sydney’s Maybe Sammy.
Stefano’s signature martinis and Perrier-crafted cocktails will set the stage for a night of flair and sophistication.
The experience will be elevated by menu pairings from Executive Chef Pawan Dutta, the creative force behind Showroom Bar and winner of Hotel Chef of the Year 2025 (Victorian Accommodation Awards for Excellence). Chef Pawan has designed a five-course menu featuring duck liver parfait with black pepper meringue and raspberries, Moreton Bay bugs with lemongrass velouté, and grilled Sher Wagyu among the highlights.

Guests will sip their way through bespoke creations by Filardi including the bright and playful ‘Clover’ (vodka, lime and raspberry syrup), exotic ‘Krabi’ (coconut yoghurt, Tequila Blanco and Chardonnay verjus) ‘Midnight Lights’, a decadent finale of mango, single malt Scotch whisky, Suze and ginger-pink peppercorn syrup.
Set against the backdrop of The Royce’s art-deco decor, the evening promises theatre at every turn.
