Archie Rose opens the Still Room

Archie Rose Distilling Co. has reimagined its original distillery as the Still Room, an immersive destination celebrating Australian spirits.

Archie Rose outgrew its original home in 2020 and built a new distillery in Banksmeadow, Sydney. And now its original Rosebery space has been reimagined and opened to the public.

“This relaunch represents a new era for Archie Rose,” said Archie Rose Founder Will Edwards.

“After more than a decade of sharing our spirits and experiences with over 100,000 guests, we’re building on that legacy to bring every element of what we do together under one roof, from blending and distilling to tasting and enjoying, and creating a space where every guest, whether local or international, can experience the full breadth of Archie Rose first hand.”

The Still Room hosts signature experiences including hands-on Blend Your Own Whisky and Blend Your Own Gin classes. Each year, more than 10,000 guests take part in these experiences.

Attached to the Still Room, the revitalised Cellar Door introduces an elevated retail and tasting experience, showcasing the full range of Archie Rose’s award-winning spirits available to sample and purchase.

“As we relaunch our original Rosebery home, we’ve taken the opportunity to ensure it’s a space where everyone can experience Archie Rose,” said Head of Hospitality Harriet Leigh.

“From free tours and tastings and extended opening hours, to translated tours for international visitors, we’re proud to make the distillery more inclusive and ready to welcome guests from all over the world.”

From 1 December, the Archie Rose Bar will extend its opening hours, welcoming guests late into the evening from Tuesday to Sunday. Throughout summer, visitors can enjoy Archie Rose’s signature experiences with additional sessions running between 22 December and 11 January.

To celebrate the relaunch, Archie Rose is offering complimentary one-hour tours and guided tastings of its award-winning signature range throughout January. Guests will step behind the scenes to discover the craft and creativity behind the spirits, before finishing with a hosted tasting.

As part of its ongoing commitment to accessibility and inclusivity, Archie Rose is trialling a new Tourism Ready Program to enhance experiences for both local and international visitors. The trial includes translated tours in Mandarin and Korean for group travellers, hotels and inbound partners, as well as Accessible Tours in Auslan (Australian Sign Language).

Archie Rose will hold a series of interpreted Tour & Tasting experiences in the new year:

  • Mandarin Interpreted Tour & Tasting – 9 January 2026
  • Korean Interpreted Tour & Tasting – 16 January 2026
  • Auslan Interpreted Tour & Tasting – 24 January 2026

Tried & tasted: The Still Room’s cocktail menu

Drinks Digest put Archie Rose’s cocktail menu through its paces last week and it features some absolute stunners.

Our pick was the Revolver with Archie Rose Single Malt Whisky, White Possum coffee liqueur and orange oils – an absolutely glorious drink that has replaced the Old Fashioned at the top of our favourite whisky cocktail list.

A close second was the Peachfuzz with Archie Rose Signature Dry Gin, Scylla Peach, cacao and citrus. While there are hints of peachy sweetness, they’re not overpowering – a delicious summer sipper.

And, of course, nothing beats a classic G&T on a steamy afternoon.

The room itself is spacious, simple and striking with high ceilings and the distillery’s original (retired) stills adding to the ambience. It’s a great space to relax in the midst of buregoning Rosebery. The bar experience is elevated by the warm and friendly staff.
