GOTHAM at The Still cements its place in Hobart

Following the success of its pop-up GOTHAM bar activation during Dark Mofo, LARK Distilling Co. has announced the reimagined Hobart cocktail lounge will become a permanent fixture in the city.

Initially launched as a limited concept at The Still, GOTHAM has quickly become one of Hobart’s most beloved hospitality venues. It features a New York bar-inspired menu and signature cocktails and a moody soundscape delivered via Tasmanian-made Pitt & Giblin speakers.

Since early June, the brand’s flagship bar has welcomed more than 5000 guests, serving 3070 freshly shucked oysters, 1139 martinis, 446 Negronis, 309 classic cheeseburgers and 200 nips of Dark LARK.

LARK Distilling Co. Head of Hospitality Dan Knight said: “GOTHAM has exceeded our expectations since day one. The response from locals and visitors alike has been incredible, with the reimagined venue quickly becoming an important part of Hobart’s bar scene.

“We’ve always wanted GOTHAM to be more than a whisky bar—it’s a place where people can come together over exceptional drinks, great food and live music, whether they’re discovering Tasmanian whisky for the first time, or have loved LARK for decades. We’re thrilled to make GOTHAM at The Still a true flagship home for the brand.”

The announcement comes just days before Tasmanian Whisky Week (1-9 August) kicks off, with GOTHAM at The Still
hosting two sold-out festival events—Pour Decisions trivia and Drag & Dram—as part of LARK’s broader program.

LARK’s year-round experiences will also continue to run throughout Tasmanian Whisky Week, including the twice-daily behind-the-scenes Production and Site Tour at Pontville Distillery, whisky tastings and blending experiences at the iconic
LARK Cellar Door on Davey Street in Hobart and the gin-making experience at the now-permanent GOTHAM at The Still.
