The world’s first Coravin Aged Wine Clinic will be held in Sydney later this month, providing a unique opportunity for wine enthusiasts to have their most prized vintages professionally assessed by a Master of Wine.

The pop-up will be held at Grappa, The Rocks, on 27 August 2026. Guided by one of Australia’s top wine authorities, Andrea Pritzker MW, each bookable 15-minute consultation will allow wine lovers and collectors to bring one special bottle from home to be expertly assessed, without removing the cork or interrupting the ageing process. 

Pritzker will use Coravin’s Timeless by-the-glass system, fitted with the Coravin Vintage Needle, specifically engineered to pass safely through old and fragile corks without damaging them, to extract two small tasting serves.

As the wine is poured, the system replaces it with Argon, a neutral  gas widely used in the winemaking process. Upon removal, the cork naturally reseals itself, allowing the remaining wine to continue its ageing journey completely undisturbed.

Wines will be assessed purely for their evolution and ideal ageing window, rather than monetary value. Following the tasting, Pritzker will provide custom tasting notes capturing a snapshot of the wine’s current development. The bottle will then be stamped with a Coravin seal, the tasting date, and an expert recommendation on when to revisit the wine.

Beyond the private assessments, the pop-up will feature the Coravin Tasting Lounge, where attendees can enjoy canapés, connect with like-minded wine enthusiasts, and taste rare vintage wines from esteemed producers such as Hickinbotham, Yangarra and Torbreck.

The Tasting Lounge will also include special bottles from Grappa’s reserve cellar. Lounge access is included for Aged Wine Clinic ticket holders, but can also be purchased separately for those wanting to taste rare wines without bringing their own bottle. 

Coravin Founder and Inventor Greg Lambrecht said: “An aged bottle of wine is a time capsule, but historically, the only way to know if it was at its peak was to open it, which is a rather final commitment.

“I invented Coravin because I wanted the ability to check in on that journey. I wanted to taste how a bottle was evolving at year five, year ten, and year fifteen. Our Aged Wine Clinic gives Sydney’s wine lovers that same ability to taste their rarest bottles, knowing they can come back to them again when the time is right.

Tickets to the Coravin Tasting Lounge can also be purchased separately for $90 (plus booking fee). 

The pop-up clinic will kick-off a month-long celebration of vintage wine across Sydney.
