Mudgee’s Three Tails Brewery has partnered with award-winning native food provider, Indigiearth on a new beer that pays homage to the brew’s native Australian ingredients.
The Lemon Aspen Sour Pale pairs Indigearth’s native lemon aspen – an Australian citrus – with wild-foraged yeast, for a beer that heroes Australian bush food.
Indigiearth founder and Ngemba Weilman woman Sharon Winsor was also behind the beer can’s unique artwork – a hand-drawn sketch of the lemon aspen, set against a striking yellow background.
Often referred to as a rainforest lemon, lemon aspen is a lime-grapefruit hybrid, native to Far North Queensland.
The Lemon Aspen Sour Pale packs a punch, courtesy of the intense, tart lemon flavour from the lemon aspen, along with notes of eucalyptus, grapefruit, and honey. The beer also features wild yeast, foraged from the Illawarra, and organic malt from Voyager in the NSW Riverina.
The beer is the latest collaboration brew for Three Tails, which has partnered with numerous Mudgee producers including Robert Stein Winery and Logan Wines for its iconic Two Worlds Collide series and Spencer Cocoa and Acreage Coffee for its Mudgee Mochaccino.

Winsor said: “It’s exciting to see native ingredients being embraced and utilised in many different ways. I’ve been in business in the native food space commercially for 29 years, sharing knowledge and culture through our food and botanicals. Native ingredients have always been here and we want everyone to embrace the beauty of what mother earth provides in its natural form.”
Indigiearth works and partners with First Nation growers and communities to support and grow the native food industry, as well as continue traditional land management practices.
The Lemon Aspen Sour Pale Ale is available at Three Tails Brewery and select Central West NSW suppliers.
